B Ration Pineapple Milk

The B Ration for American troops during WWII was made up of about 100 items that were dehydrated, canned, or otherwise preserved. The goal of army cooks was to have each meal consist of 1 meat, 2 vegetables or fruits, dessert, and something to drink other than water. Often, this bonus drink was coffee, but I decided to go with something a little more interesting from the army cookbook.
This pineapple milk really surprised me. The foam stays nicely on top, and it’s like drinking pineapple juice without the astringency. It’s smooth and creamy and pineapple-y, and is quite a nice beverage, wartime rations or no.
“NO. 803. PINEAPPLE MILK
Yield: 100 servings, approximately 1/2 mess kit cup each.
Milk, powdered…8 pounds (8 No. 56 dippers)
Sugar, granulated…2 pounds (1 No. 56 dipper)
Water…14 quarts (14 No. 56 dippers)
Pineapple juice…5 No. 10 cans
1. Combine powdered milk and sugar and beat thoroughly with a wire whip to break up any lumps.
2. Add powdered milk mixture to the water by floating it on top. Beat with a wire whip.
3. Add pineapple juice to milk mixture. Stir constantly to prevent lumping.
4. Chill if possible. Beat with a wire whip just before serving.”
Ingredients:
- 1 1/2 cups (160 g) powdered whole milk
- 1/4 cup (50 g) sugar
- 2 1/2 cups (530 ml) water
- 3 cups (710 ml) canned pineapple juice
Instructions:
- Whisk the powdered milk and sugar together until combined and there are no lumps.
- Pour the water into a large bowl, then add in the milk mixture. Whisk it together until combined and the milk has fully dissolved.
- Whisking constantly, add the pineapple juice.
- Chill, then serve it forth with Vienna Sausage and Beans and Apple Cranberry Sauce for a complete B Ration meal.
